Before we drastically reduced the amount of grains we eat, we had biscuits with dinner almost every night. I was not sure how to stick with our choice to reduce our consumption of grains and still enjoy biscuits until I came across this recipe. I adapted it and came up with these delicious biscuits that pair perfectly with our favorite chili.
Coconut Garlic & Chive Biscuits
- 4 eggs
- 1/4 c. coconut oil, melted
- 1/4 tsp. real salt
- 4 cloves garlic, minced
- 1/3 c. coconut flour
- 1/4 tsp. baking powder
- 1/4 c. chives
Preheat your oven to 400. Using a hand mixer (or whisk, stand mixer etc.), mix together the eggs, coconut oil, salt and garlic until whipped. Add the coconut flour and baking powder and incorporate well. Toss in the chives and mix everything together one more time. Using a large spoon, drop the batter onto a pizza stone or other baking sheet. Bake for 10-12 minutes. These freeze wonderfully, so I have been making a BIG batch (tripling or quadrupling the original recipe) and freezing them. Yields six.
